Couture Cake Cupcake Decorating Class

by minibites

I’ve always enjoyed the smiles and oohs and aahs that come from people admiring fondant decorated cupcakes, and although I admit they are not the most flavoursome things on a cake, it’s amazing what things this icing can make.

My fellow baker and I spent our Saturday morning learning some neat tricks and tips from the pros at Couture Cake in a quick 2-hour class. It felt like being in kindergarten all over again moulding and rolling play-doh textured icing and cutting our wonderful shapes and faces.

Beginning with 6 plain cupcakes, we begin by spreading chocolate ganache and white fondant as a base for our decorations. We dive into the world of quilting, edible pearls, shimmer dust, floral tools, cutters, water and edible pens – learning to make 3D ladybugs and flowers, balloons and cheesy bears.

The tools that are definitely going on my wishlist is a water pen (so much easier to use than a paintbrush & pot of water!), KopyKake edible pen for fiddly details, a set of ball tools for 3D flowers, a quilting tool and plenty of cutters! And not to forget, the wonders of what a square of transparency paper, which is used as little sander for the white bases.

The Cupcake Family, Melbourne

Orange Almond, Green Tea Medley, Simply Vanilla & Hazelnut Crunch

I love a good cupcake, especially a good babycake. A bite of cake and a bite of icing. At first, I was skeptical in trying these cute cakes, mainly due to the fact that most cupcakes I have tasted in Sydney have dry cake bases and very bland and creamy icing to compensate. Although, I was taken back when I bit into each cupcake and found each little cupcake had its own refreshing and defining flavour. My favourite would have to be the Simply Vanilla, which I was abit adamant to taste with the fear it would be a mouthful of butter icing – but I was in for a pleasant surprise. Wonderfully whipped, vanilla bean icing. Absolutely perfect!

Halloween Cupcakes, Buppa’s Bakehouse

by minibites

I love the concept of experimental and creative cupcakes; it gives the opportunity for bakers to truly be creative – to entertain the eyes and the taste buds of the consumer. A work colleague ordered these lavish Halloween themed cupcakes for our office Halloween party and they were definitely a hit! I enjoyed the “mummified” cupcakes with a chocolate base and cream cheese topping over the little chocolate mice. The mice were very visually appealing but the taste was a slightly disappointing –  a little too hard for my liking. They’re not my favourite cupcakes in Sydney, but definitely hats off to the creativity.

Happy Halloween!
