Is it a beehive? A birds nest? Mmm it’s Mr Zumbo’s croquembouche! Another aesthetically pleasing piece of eye candy from Mr Zumbo. It’s the birthday of the most important person in the office, the brain and genius behind it all, so it was a fitting excuse to spoil him… and us!

The tower of custard filled profiteroles is generously held together with toffee then wrapped with spun sugar goodness and tiny flowers. Again, it’s delightfully over to top and overindulgent.

The centre is a lot harder and less delicate as it looks, and really should come with an instruction manual and a miniature hammer and chisel to crack through the toffee. But once you able to serve it, the light choux pastries hide the silky, smooth custard and the spun sugar is just right (it’s a lot harder to do than it looks!!)

This tower had 35 profiteroles which was more than enough to send 13 people into a sugar coma. Make sure you have a tub of vanilla ice cream ready to tames the sweetness.

Couture Cake Cupcake Decorating Class

I’ve always enjoyed the smiles and oohs and aahs that come from people admiring fondant decorated cupcakes, and although I admit they are not the most flavoursome things on a cake, it’s amazing what things this icing can make.

My fellow baker and I spent our Saturday morning learning some neat tricks and tips from the pros at Couture Cake in a quick 2-hour class. It felt like being in kindergarten all over again moulding and rolling play-doh textured icing and cutting our wonderful shapes and faces.

Beginning with 6 plain cupcakes, we begin by spreading chocolate ganache and white fondant as a base for our decorations. We dive into the world of quilting, edible pearls, shimmer dust, floral tools, cutters, water and edible pens – learning to make 3D ladybugs and flowers, balloons and cheesy bears.

The tools that are definitely going on my wishlist is a water pen (so much easier to use than a paintbrush & pot of water!), KopyKake edible pen for fiddly details, a set of ball tools for 3D flowers, a quilting tool and plenty of cutters! And not to forget, the wonders of what a square of transparency paper, which is used as little sander for the white bases.

Adriano Zumbo’s V8 Cake

So there’s been an enormous Masterchef addiction in our office this year, especially for my boss – so we only found it fitting to spoil ourselves with the Adriano Zumbo’s V8 cake.

The V8 holds 8 vanilla wonders: Vanilla Crème Chantilly, Toasted Vanilla Brûlee, Vanilla Water Gel, Vanilla Ganache, Vanilla Macaron, Vanilla Dacquoise, Vanilla Chiffon Cake and Vanilla Almond Crunch, and throw in some brown sugar crunch crumble in there just to mix it up a little…

Definitely overindulgent, over the top and deadly sweet. There was no wonder why we all fell into a sugar coma after our little cube. Although there is only one dominant flavour, the different textures made the cake so overwhelming interesting. Without knowing what will come next, eat bite tastes different as everyone tried to pinpoint what was what.

Christopher’s Cake Shop

Our office loves cake, and Christopher’s is a great cake shop that we can always rely on for a good cake time. We’ve sampled the collection from the Continental, a light vanilla sponge, to the grand Dutchness, a rich chocolate fudge with biscuit pieces, and my favourite, the Creme Roche, a rich chocolate and hazelnut layered cake. This place oozes a Greek inspired bakery with petite sized cakes and sweets. Be prepared to indulge in rich sugary and chocolate treats.

My 22nd Birthday, Gelato Messina

Our office is known for our cake time – we enjoy celebrating birthdays with lavish birthday cakes from our local cake shops, and luckily, our local cake shops are damn good. Usually the birthday girl hints what type of cake they’re hoping for, but as I was away in Melbourne, the girls organised my cake without my assistance. They choose a tiramisu ice cream cake from Messina, and it was definitely the perfect choice!

The base was lined with savorlardi biscuits soaked with expresso with a generous layer of tiramisu ice cream and dusted heavily with Italian cocoa. Simply delicious.
