The Sensory Lab, Melbourne

This little coffee lab is located at the end of the David Jones’ Food Hall. Being in Melbourne, it was no surprise that it took me a few twists and turns and some mapping action before I could locate the place. This scientific lab is all a learning experience, with the waiters decked in white lab coat attire and armed with coffee knowledge.

The interior mirrors a highschool science lab starting from the faux marble like science lab benches to the conical flasks and amber jars. And it’s particularly lovely that there are single wall benches to have a coffee on your own with the paper without feeling too lonesome.

I settle with my Wallpaper Melbourne guide, the paper and a skim latte. I’m not as game enough as my companions to have a full cuppa of syphon coffee. It does require an acquired taste but over a few minutes as the coffee begins to cool down, the flavours begin to develop further and further revealing multiple dimensions in taste. Sooner or later I’ll be able to ditch the lattes and appreciate the essence of coffee.

It’s a great place to learn about this method of coffee brewing and but take the time to smell, relax and enjoy a cup of coffee.

Having missed this place time after time, we were finally made an reservation for a late lunch. Our reservation for a banquet table on the second floor, which is beautifully decorated with a mix of Beijing and Shanghai accents. Gorgeous wooden furniture with deep red curtains providing privacy for each table. On the dumpling side of things, having tasted the Sydney leader in “soup” dumplings, Din Tai Fung, these ones are on par. The dumplings are a little thinner in texture and the broth is less sweeter, but still a very good shao long bao!

Much like the rest of the nation, I’ve been living in World Cup land with early mornings, sleep-ins and with my eyes glued to SBS. I haven’t stopped eating, so hiatus will be over soon and I will be back!
